Richardson’s background includes his current role as CEO of EUG Holdco, LLC, the parent and franchisor of Eggs Up Grill. Eggs Up Grill is a rapidly growing restaurant concept in the vibrant breakfast, brunch, and lunch category. Founded in 1997, the brand was acquired by the private investment firm WJ Partners in 2018.
Since joining Eggs Up Grill in July 2018, Richardson has energized the business through building the leadership team and strengthening franchisee relationships, all while delivering accelerated growth. Eggs Up Grill has more than doubled in size since Richardson’s arrival, closing out 2021 with 54 restaurants and on track to grow to 70 in the current year. Ricky was attracted to the Eggs Up Grill opportunity by the brand’s unique focus on community, franchisee and team member lifestyles, and the ability to assist franchisees in realizing their business dreams.
Prior to joining Eggs Up Grill, Richardson served over 20 years with TGIFridays, a global leader in casual dining, holding a range of US and international executive roles, and lastly serving as President and Chief Operating Officer of Fridays USA.
Richardson is a graduate of Baylor University, having earned both his BBA and MBA. He values his time with his family – his wife Paula and their two daughters, Rumer and Rachel, and son-in-law Michael Rogers. He’s an avid distance runner, and he volunteers in support of Habitat for Humanity.
